Cool, slow ripening seasons help grapes retain the freshness and acidity essential for elegant sparkling wines. For us, sparkling isn’t an afterthought. It’s central to our long-term vision. Our estate in Offaly is perfectly positioned to nurture the grapes that will form the base of Ireland’s first premium sparkling wines.

Our Timeline
- 2025 – 2028: Vineyard establishment, vine care, and first small trial harvests
- 2029: Release of our first still wines
- 2032: The debut of our first Irish sparkling wine

How We’re Preparing

- Traditional Method: Following the time-honoured process used in Champagne, with secondary fermentation in the bottle
